Freezing Onions and Peppers

You can freeze onions and peppers and have them available from the freezer for several months. I often saute frozen onions and peppers when making omelets. Here is how.

Freezing Onions

  1. Peel a fresh onion.
  2. Chop onion into 1/4 inch pieces.
  3. Put the chopped onion pieces into a 1 gallon freezer bag.
  4. Sqeeze air out of the bag.
  5. Spread the onion pieces out in order to have a flat freezer bag of onions.
  6. Place bag in the freezer ensuring it maintains its flat shape. If needed place flattened bag on a baking sheet and then place the bag and sheet into freezer. Once frozen, remove the baking sheet.
  7. Once onion pieces have frozen hard, you can crunch them up in the bag.
  8. Use the frozen onions directly from the freezer.

Freezing Peppers

  1. Peel a fresh pepper (green, red, orange, or yellow).
  2. Chop pepper into 1/4 inch pieces.
  3. Put the chopped pepper pieces into a 1 gallon freezer bag.
  4. Sqeeze air out of the bag.
  5. Spread the pepper pieces out in order to have a flat freezer bag of peppers.
  6. Place bag in the freezer ensuring it maintains its flat shape. If needed place flattened bag on a baking sheet and then place the bag and sheet into freezer. Once frozen, remove the baking sheet.
  7. Once pepper pieces have frozen hard, you can crunch them up in the bag.
  8. Use the frozen peppers directly from the freezer.
